Super Healthy Blueberry Muffins PDF Print E-mail

 

 Here is a wonderful, healthy recipe passed on by a friend.

Healthy Blueberry Muffins

 

3 Banannas – mashed

½ cup pears – mashed

½ cup blueberries

1 Tablespoon cinnamon

1 Tablespoon vanilla

1-1/2 cups oat meal (not instant)

1 teaspoon olive oil – optional – I leave this out

 

Spray Pam or It’s Not Butter spray on muffin tin.  I use these because they are non-fat

 

Mash the bananas and pears.  I leave them chunky so I can have pieces in the muffin.  I have used fresh and canned pears, both work.

Add the rest of ingredients – I add the berries last.  I have used fresh or frozen berries.

Spoon mixture evenly into muffin pan.   Makes 6 

Cook at 450 degrees for 30 minutes.  Let cool, use knife around muffins to help release.

Rhuberry Crisp PDF Print E-mail

1 cup flour

1/2 cup oatmeal

1/4 cup sugar

1/4 cup brown sugar

1/2 teaspoon salt

6 tablespoons butter

1 tablespoon cold water

 

2 cups rhubarb

2 cups blueberries

(OR 4 cups blueberries and no rhubarb)

1/2 cup sugar

2 tablespoons flour

 

Combine first 7 ingredients.  Mix to form crumbs.  Set aside.

Combine last 4 ingredients and put into 8" x 8" pan.  Sprinkle crumb mixture over top.  Bake at 450 for 10 minutes then reduce heat to 375 for 25-30 minutes.   YUM!!!

Blueberry Crumb Bars PDF Print E-mail

 

1/4 cup butter, softened

1 1/2 cups flour

1 1/2 teas. baking powder

1/2 teas. baking soda

1/4 teas. salt

1/4 teas. cinnamon

3/4 cup white sugar

1 egg

2/3 cup buttermilk (well shaken)

1 1/2 cups blueberries tossed with 1 teas. flour

 

Streusel Topping

1 cup flour

1/2 cup brown sugar, packed

1/4 teas. salt

1/2 cup butter

 

Preheat oven to 350 degrees.  For streusel topping - mix together flour, brown sugar & salt.  Cut in butter with fork or pastry blender until crumbly.  Chill.

Spray a 9 in square baking pan with non stick spray or butter and flour if desired.  Combine flour, baking powder, baking soda, salt and cinnamon in a medium bowl.  Set aside.  In a large bowl - beat butter and white sugar until fluffy.  Add egg, beat well.  Add buttermilk and flour mixture until just combined.  Batter will be very stiff.  Fold blueberries, tossed with flour into batter.  Spoon into prepared pan.

 

Sprinkle chilled streusel topping over cake.  Bake until golden brown and a toothpick stuck in the middle comes out clean: 45 to 50 minutes.  Let cool completely before cutting into squares.   YUM!!
